Total Time

1 hour 15 minutes

Ingredients

  • 1.5 cups warm water

  • 1 TBSP Sugar

  • 2 TSP active dry yeast

  • 1 TSP salt

  • 1 TBSP melted butter

  • 4 cups flour

  • 0.5 cup baking soda

  • Chunky/coarse salt for topping

Directions

  • Combine warm water, yeast, and 1 tablespoon of sugar. Stir until well combined, and let mixture sit until it becomes foamy on top (about 5 minutes). I always use my Pyrex glass measuring cup for this step and not my metal stand mixing bowl.
  • After about 1 minute, add in salt and melted butter (cooled slightly) to the yeast mixture and mix to combine.
  • Add this mixture to your stand mixer (if you don’t have one I highly recommend this one!). Turn on the mixer with the dough hook attachment to low and add flour one cup at a time until completely incorporated and dough is no longer sticky. Allow the mixer to knead the finished dough for 3-5 minutes.
  • Transfer the dough to an oiled bowl and roll the dough around the bowl to lightly cover the dough in oil. Cover the dough in the bowl with plastic wrap, and allow to rise for approximately 20 minutes at room temperature.
  • While dough is resting/rising, you can preheat your oven to 400 degrees F, line your baking sheet with parchment paper or a silicone mat (I use these every time and they make a big difference!), and make your baking soda bath (add about 10 cups of water in a pot with 0.5 cup of baking soda and bring to a low boil on the stove top – you will dip the pretzels in this liquid before baking them!).
  • When the dough is ready (after 20 mins of resting), divide the dough into 8-10 pieces, and roll them out into long logs and twist them into the traditional pretzel shape. If you aren’t familiar with pretzel making, this 1 minute YouTube tutorial is VERY helpful!
  • Next, drop a few pretzels at a time in the boiling baking soda water for about 30 seconds each (no more!). Dab the pretzels lightly on a kitchen towel and place them on your prepared baking sheets. While they are still wet, sprinkle them with your coarse salt.
  • Bake at 400 degrees F for 15 minutes or until golden.
  • Enjoy!! Don’t forget to dip them in mustard or warm melted cheese! Keep wrapped at room temperature for a couple of days, but freeze for longer storage.
